Seafood is very popular and plentiful in the Islands. My best single recommendation is that you try the following dishes: the ceviche (shrimps marinated in lemon and onions), encebollado (a delicious soup with fish), lobsters and the famous sea cucumbers.

Here's a Galapagos Recipe "CEVICHE" (Marinated Shrimp)Ingredients: - 2 pounds medium shrimp, shelled and deveined
- 2 cups bitter (Seville) orange juice
- 1 medium onion, finely chopped
- 1 fresh hot red or green pepper, seeded and finely chopped
- 1 large tomato, peeled, seeded, and chopped
- freshly ground pepper and salt
HOW TO PREPARE:
Drop the shrimp into a large saucepan of boiling salted water and boil for 2 or 3 minutes, or until the shrimp are cooked.Drain and mix with the orange juice, onion, hot pepper, tomato, salt and pepper to taste. Let stand an hour before serving. Serve with toasted corn and popcorn on the side.
