Ceviches can be made with many different types of seafood and non seafood ingredients.
The food from Galapagos and Ecuador is known for its fabulous exotic fruits, high quality fish and seafood.
The main food from the Galapagos Islands and Ecuador, is Ceviche, a seafood dish marinated in lemon and onions, this is Ecuador's answer to sushi.
Unlike sushi however, Ecuadorian ceviche is traditionally accompanied by popcorn and thinly sliced and fried green bananas.
Ceviche can be made of fish, shrimp, shellfish, squid, or all of the above (mixed).
I am going to show you two different Galapagos recipes for Ceviche. One is made with shrimp and the other one with fish.
Boil water salt and pepper in a pan. After it boils, add shrimp. Let it boil until shrimp becomes lightly red and remove from heat.
Pour out water and let shrimp cool. Don't let them overcook! If they are overcooked, the shrimp will be a little chewy, but still delicious.
Cut the onion into long thing strips (julienne style). Place them in a bowl with water and 2 tablespoons of salt and let it settle for 10 minutes.
Then gently rinse with water. This will remove the bitter bite from the onion and make it sweeter. Cut tomatoes into small squares.
In a large bowl, mix the onion, tomatoes, orange and lemon juice, ketchup, mustard, cilantro (or parsley), oil, salt and pepper. Once the shrimp has cooled, add shrimp and mix.
Serve with fried plantain chips, popcorn and dry corn kernels. Enjoy this classic Galapagos recipe, preferably with a light beer.
For this Galapagos recipe place the raw fish pieces in a glass dish and cover it with salt, hot peppers, crushed garlic, a tablespoon of chopped cilantro, and lime juice from about 10 limes, the fish should be completely covered by lime juice.
Cover the dish with plastic wrap and chill, let the fish cook itself in the lime juice for at least 4 hours.
Place the sliced shallots in a bowl, cover them with warm water and salt, let rest for at least 10 minutes, drain and rinse well.
Once the fish is cooked in the lime juice rinse it well, removing the hot peppers, garlic and cilantro.
Combine the fish with the shallots, tomatoes, bell peppers, cilantro, and lime juice from remaining 10 limes, sunflower oil and salt to taste in a large non-reactive bowl, mix well and refrigerate for at least 30 minutes before serving.
Serve this Galapagos recipe with plantain chips, popcorn or corn nuts as well as with some good hot sauce.
